Cut the bacon in 2 inch pieces. Arrange a slice of bacon, an oyster, and thick slice of tomato on skewers. Repeat the arrangement. Sprinkle with salt and pepper, and place skewers across baking dish, leaving a little space between the bacon, oyster and tomatoes on the skewers. Bake in a very hot oven, 500 degrees for about 20 minutes or until bacon is crisp. Serves 6.

Oysters can be eaten plain or with a variety of sauces: Melted butter with garlic, Worcestershire sauce, Teriyaki sauce with a dash of hot chilli oil, Seafood cocktail sauce, barbecue sauce or lemon juice.
